Pancakes don’t have to be boring…
Breakfast has always been, and will always be my favourite meal of the day. There’s nothing quite like waking up to a cup of tea and a warm bowl oats, some french toast, or in this case, pancakes. Unfortunately, the best and most decadent pancakes are usually packed full of sugar and butter, which will leave you feeling sluggish for the rest of the day. Not the most ideal way of starting the day in my opinion. So instead, I’d make myself some buckwheat pancakes with a punch of maca to keep me full and energetic, the best way to kick start any day.
For those who do not know what maca is, it’s basically a superfood which reaps lots of health benefits. You can find out more about it here, just be sure not to take too much!
You will need:
- 1 Cup buckwheat flour
- 1 Tbsp maca powder
- 2 Tsp baking powder
- Pinch of salt
- 1 and 1/2 Cups oat milk (any non-dairy milk will do)
- 2 Tbsp water
- 1 Tbsp coconut oil
To make these beautiful, round and fluffy pancakes really couldn’t be much easier (or maybe I’m just lazy and insist on doing it the easy way!). Simply mix all the dry ingredients in a bowl and add the wet ingredients into the dry ingredients. Whisk and you’re done!
Heat a pan over medium heat with olive oil/ coconut oil and fry your pancakes away. Here’s when you can go crazy with the flipping and other acrobatic stunts-just be sure not to burn yourself while at it!
Tip: PATIENCE IS KEY. When frying your pancakes, ensure the surface is bubbling away entirely before flipping. Do not be impatient and flip them too early as your pancakes will fall apart (trust me I’ve been there).
Plate them up nicely into a pancake stack. Snap some photos, post them on Instagram, hashtag #pancakesporn, tag me on instagram and then you can dig in.
You can dress your pancakes any way you like, have fun with it and mix and match. I couldn’t resist the combination of some raw organic chocolate sauce, topped off with banana and dates. The dates give an extra sweetness and sticky texture which complements these sugar and sweetener-free pancakes perfectly!
